Vegan Corn & black bean Flautas

If you had a goal for yourself to cook more non-meat-based dishes this your, here’s your next recipe! Try these vegan black bean and corn stuffed flautas—they’re perfect to bring to your next potluck or to store in the freezer for those late night cravings.

Ingredients:

  • An onion

  • Spices—Cumin, Chili Powder, Salt and Pepper

  • 1 can of Black Beans

  • 1 can of Corn

  • 1 can of Hatch Green Chilis (optional)

  • Tortillas of choice

  • Cheese of choice

  • Toppings!

    • Avocado

    • Cabbage Slaw

    • Pico de galo or salsa

    • Cilantro

To Make:

-In a medium sized pan on medium heat, sauté 1/2 a diced onion. once translucent, add minced garlic to your hearts content, and cumin, chili powder, and salt. let that cook a bit then set aside

-In a mixing bowl, add a can and a half of black beans, 4oz can of hatch green chili, and mash them together. once mashed, add half a can of corn, the sautéed onions, and juice of half a lime, S+P

-Slightly warm your tortilla of choice! I love using any of the Siete Foods tortillas as they’re smaller than regular tortillas but bigger than corn tortillas.

-Take a tortilla and spoon the mixture into the middle, then roll the tortillas into the flauta shape.

-Place the rolled flautas into a pyrex pan seam side down. Repeat until all the mixtures used (~12 flautas)

-For cheesy goodness sprinkle your cheese of choice on top. To keep vegan, the best is the VioLife Mexican Style Shreds or you can use any cheese of your choosing.

-In a 400 deg oven, bake the flautas for about 15 minutes, or until the cheese is melted and the flautas are browned a little.

-Top the flautas with cabbage, shredded lettuce, kale salad, or whatever greens you’d like, some cilantro and avocado.
